Ras Moss does not use salt; he is an Ital.

Things have changed quite a bit since I went vegetarian back in the early nineties.

The other day, I was not feeling the meat vibes, so, I asked my I-gren (brethren) Ras Moss to cook some pumpkin stew for me.

Place beef in the saucepan and cook until evenly brown. Then the diced pumpkin gets added, which is meant to be cooked until soft enough to mash into a puree.

The potatoes and the fava beans in this recipe are cooked separately with the reserved cooking liquid being added to the stew for flavoring (in place of a broth) – also brilliant.

Juicy chunks of sugar pumpkin are simmered in tomato sauce with spices, then served over basmati rice with cashew cream to make this Afghan-inspired pumpkin stew!

I’d say this is a stupendous super stew.

In this hearty cool weather stew you’ll find; lots of Lentils, a wee Pumpkin, Mirepoix, Red Bell Pepper, Yellow Potatoes, Chili Peppers, Roma Tomatoes, Garlic, Herbs, Spinach, and Vegan Vegetable Broth. Preparation.

That’s literally all there is in this stew so it can’t be all that bad for you.

Note: Ras Moss cooked the pumpkin stew without salt, I added the salt to it. Heat 2 tablespoons oil in a large saucepan over medium-high heat.

Mix in the water, potatoes, carrots, green bell pepper, garlic, onion, salt and pepper.

Chop enough fennel fronds to measure 1 tablespoon and reserve, then discard stalks and remaining fronds.
